Ingredients

To prepare this delicious Gujarati Handvo, you will need the following ingredients:

  • For the batter:

    • 1 cup rice
    • 1/2 cup chana dal (split chickpeas)
    • 1/2 cup toor dal (split pigeon peas)
    • 1/4 cup urad dal (split black gram)
    • 1/4 cup moong dal (split green gram)
    • 1 cup yogurt
    • 1 tsp ginger-garlic paste
    • 1 tsp green chili paste
    • 1/2 tsp turmeric powder
    • 1/2 tsp red chili powder
    • Salt to taste
  • For the tempering:

    • 1 tbsp oil
    • 1 tsp mustard seeds
    • 1 tsp sesame seeds
    • A pinch of asafoetida (hing)
    • 1 tsp curry leaves
    • 1 tsp grated coconut (optional)
  • Vegetables (grated or finely chopped):

    • 1 cup bottle gourd (lauki)
    • 1/2 cup carrots
    • 1/2 cup spinach

Instructions

Step 1: Soak and Grind the Dals and Rice

Start by washing and soaking the rice, chana dal, toor dal, urad dal, and moong dal together for 4–5 hours. Once they are soaked, drain the water and grind the mixture into a smooth, thick batter using a blender or food processor. Add yogurt to the batter and let it ferment for 6–8 hours or overnight.

Step 2: Prepare the Batter

Once the batter has fermented, add the ginger-garlic paste, green chili paste, turmeric powder, red chili powder, and salt. Mix well. You can now add the grated vegetables, such as bottle gourd, carrots, and spinach. Stir the vegetables into the batter until everything is well-combined.

Step 3: Tempering the Batter

In a small pan, heat oil over medium heat. Add mustard seeds and let them splutter. Then, add sesame seeds, asafoetida, and curry leaves. Pour this tempering into the Handvo batter and mix well. This step adds an authentic Gujarati flavor to your Handvo.

Step 4: Cook the Handvo

Preheat your oven to 180°C (350°F). Grease a baking dish with oil and pour the prepared batter into it. Spread the batter evenly, and if you like, sprinkle grated coconut on top for extra flavor. Bake for 30–40 minutes until the Handvo is golden brown and crispy on top.

Alternatively, you can cook the Handvo on the stovetop using a thick-bottomed pan. Heat oil in the pan, pour the batter, cover, and cook on low heat for 20–25 minutes until the bottom is crispy. Flip and cook the other side for 10 minutes.

Step 5: Serve
